Cookery book club, Oxford

Last Sunday I was lucky to share recipes from What to Bake & How to Bake It with the good folk of Oxford. One of my food heroines, Sophie Grigson, runs a brilliant pop-up cookery school that moves around the city. We were based at The Story Museum, running a Cookbook Club session from 6-8.30pm.

Spoon the cheese over the brownie batter in the pan, then spread it into thin layer using the back of the spoon or a spatula. Spoon the reserved brownie batter over the cheesecake topping. Drag a skewer or the tip of a knife through the cheesecake layer to create feathery swirls.

During the class we made Fudgy Cheesecake Brownies and Pistachio Cupcakes, including a tutorial on how to pipe and swirl frosting like a pro, plus loads of tips from me. We also got to grips with wonderful Linzer Cookies, and Lemon Glazed Ginger Bundt… all in the cafe area. It was relaxed, creative and a lovely way to round off the weekend.
